This
wine highlights the strength and history
the Hunter Valley has with producing
another great white wine variety, Chardonnay.
Fully
ripe grapes are picked at night in
early February, crushed, must chilled
and transferred to drainers. Inoculated
with an aromatic yeast, the wine completes
the majority of fermentation time in
French oak hogsheads. The wine is then
matured in the same oak for up to nine
months with regular stirring on lees
to add creamy dimensions. A portion
of the wine also undergoes malolactic
fermentation. The French oak used is
sourced from forests such as Alliers,
Troncais and Vosges in France.
