Maurice
O’Shea Chardonnay – considered McWilliam’s
flagship Chardonnay – is made from the
best parcel of Chardonnay fruit available to
Mount Pleasant. This is invariably the mature
vines on elevated, rich, deep volcanic loam soils
of the Old Hill Vineyard. The average age of
the Chardonnay vines is 20 years old.
The sister wine to Maurice
O’Shea Shiraz, this wine is made from
selected super-premium parcels of Chardonnay
grapes handpicked in February. Inoculated in
an aromatic yeast, the wine completes the majority
of fermentation time in 100 per cent new French
oak hogsheads. The wine is the matured in the
same oak for up to nine months with regular
stirring on lees to add creamy dimensions.
A portion of the wine also undergoes malolactic
fermentation.
