Maurice
O’Shea Shiraz is made from 120-year-old
Shiraz vines, which were planted by the
property’s original owner, Charles
King. A smaller portion is sourced from
the 80-year-old original vines on the
company’s adjoining Old Paddock
Vineyard, which was planted by legendary
winemaker, Maurice O’Shea. The
wine confirmed its place as one of Australia’s
greatest Shiraz wines when it outscored
Penfolds Grange and Henschke Hill of
Grace to become the highest rating Shiraz
in the newly released James Halliday’s
Australian Wine Companion 2005.
First
produced in 1987, this wine is made as a tribute
to legendary winemaker, Maurice O’Shea. It
is made in limited quantities from the best parcels
of Shiraz grapes available. Hand-picked in February,
grapes are crushed, cold soaked for 24 hours prior
to fermentation on skins, which takes place over
8-9 days in headed-down stainless steel containers
with pumping over twice daily. The wine is then
pressed and transferred into new French oak hogsheads
where primary and malolactic fermentation is completed.
Every six months the wine is racked off and returned
to the same oak for maturation over a period of
18 months. |
