Merlot
has established itself as one Australia’s
favourite red wine varieties, the Mount Pleasant
Merlot shows why.
While
maintaining the smooth drinking qualities of
this variety, this wine has distinctive Hunter
Valley characteristics of red berry fruits with
a savoury edge. Normally picked in late February
to late March, grapes are crushed, cold soaked
for 24 hours prior to fermentation on skins,
which takes place over 7-8 days in headed-down
stainless steel containers, with pumping over
twice daily. The wine is then transferred into
new and seasoned American oak puncheons where
primary fermentation and malolactic fermentation
is completed. Every six months, the wine is racked
off and returned to the same oak for maturation
over a period of 15 months.
