Mount
Pleasant Philip Shiraz is a classic Hunter Valley
red which has been enjoyed by Australian wine
lovers for more than 35 years. A unique style
not dominated by tannin or alcohol; the wine
displays beautiful earthy fruit characters.
Bottle
aged for approximately four years prior to release,
Philip Shiraz was first marketed in 1965.
Normally picked in February, fermentation on
skins takes
place over 7-8 days in headed down stainless
steel containers with pumping over twice
daily. The wine is then transferred to into seasoned
American oak where primary fermentation and
malolactic
fermentation is completed. Every six months
the wine is racked off and returned to the same
oak
for maturation for around 18 months.
